It has a molecular formulaof C24H46O6.At room temperature, it is in the form of a pale-yellow toyellow granular solid. lt has a sorbitan monostearate HLB value of 4.7.lt hasextensive uses such as, keeps moisture of yeasts; enhances oil-waterdispersion stability; emulsifies and stabilizes in cosmetic, pharmaceutical,feeds, coating, textile formulations. Ilt is commonly used in combination withpolysorbate 60.
